Pancakes are a classic breakfast dish enjoyed all over the world. They are easy to make and can be served with a variety of toppings, from sweet syrup and berries to savory bacon and eggs. My favourite is lemon juice and sugar, or my youngest chocolate spread.
Shrove Tuesday, also known as Pancake Day, is a traditional Christian holiday that falls on the day before Ash Wednesday, the first day of Lent. Lent is a time of fasting and sacrifice, and Shrove Tuesday is seen as a last chance to indulge in rich and fatty foods before the start of this penitential period. Pancakes became a popular food for Shrove Tuesday because they are made from ingredients that were traditionally given up during Lent, such as eggs, milk, and sugar. Today, Pancake Day is celebrated by making and eating pancakes in many countries around the world, regardless of religious affiliation.

- 1 cup milk
- 1 large egg
- 2 tablespoons unsalted butter, melted

- Cook the pancake until bubbles form on the surface and the bottom is golden brown, about 2-3 minutes. Flip and cook for an additional 1-2 minutes, until the other side is golden brown.
- Repeat with the remaining batter, adding more butter to the pan as needed.
- Serve the pancakes hot with your favorite toppings, such as syrup, fruit, or butter.
